Apple Bread Pudding

An easy apple brown Betty recipe. My mom used to make this old- fashioned raisin cinnamon apple bread pudding whenever we had a few slices of stale bread and 2 or 3 apples leftover from pie making.

I loved apple Betty as a child and I still love it. It reminds me of apple pie but is much simpler to throw together.

Exact measurements are not important for this apple bread pudding recipe. We've made apple brown Betty with 1 apple or as many as 3. A single slice of day-old bread or as many as 4.

What is important is that you balance the amount of bread with the number of apple slices. The fruit provides the moisture. Too much bread and too little fruit will make the apple Betty recipe bake up dry.

When in doubt, leave the extra bread out.

Apple Betty Recipe

Ingredients List

  • Baking apples
  • Raisins
  • A fresh lemon
  • A few pieces of day-old bread (I save this in the refrigerator until I need it.)
  • White and brown sugar
  • Cinnamon and nutmeg
  • Butter
  • Cooking Instructions

    1. Generously butter a covered casserole dish.

    2. Peel, core and slice the apples thinly.

    3. Cut the bread into 1 inch squares.

    4. Crumble a tablespoon of brown sugar into the bottom of the casserole dish. Cover this with a layer of apple slices, bread cubes, raisins, white sugar and spices and dot with butter. Repeat these layers, ending with apple slices on top.

    5. Squeeze a little lemon juice over the raisin apple bread pudding unless you are using tart apples like Granny Smiths.

    6. Crumble another tablespoon of brown sugar over this. Sprinkle sugar, cinnamon and nutmeg on top of this and dot it generously with butter.

    7. Cover the dish and bake it in a 350 degree F. oven for 30-40 minutes.

    You will know when this easy apple bread pudding recipe is done because the apples deflate as they bake. It will only be half as high as it was before it went into the oven.

    Apple Betty is best served warm with vanilla ice cream.
