Oven Baked Sweet Potato Chips Recipe

These chips do not bake up crisp like a chip made with a white potato would. This is because there is so much more moisture in a sweet potato.
Sweet potatoes come in 2 types: moist-fleshed and dry-fleshed. Mostly what is sold in the grocery stores is moist-fleshed. A dry-fleshed variety would bake up more crisp but you would probably have to grow your own sweet potatoes in order to obtain them.
If all you can get ahold of is the bright orange, moist-fleshed type, use the fried sweet potato chips recipe (link below). You'll be much more pleased with the results.
To make a dessert version leave out the salt and pepper. Sprinkle the sweet potato chips with cinnamon sugar right after they emerge from the oven.
Crispy Sweet Potato Chip Recipe
This is more of a dehydrated sweet potato chip than a baked chip.
Prepare the sweet potatoes according to the recipe above. Spread the chips out on baking sheets lined with parchment paper so that they are not touching.
Bake them in a 225 degree F. oven for 50-60 minutes on each side.
The problem with this recipe is that the baked sweet potato chips will be crunchy but not very flavorful. The oven temperature is not high enough to bring out the sweetness of the sweet potato.
I suppose, from a health standpoint, this is the superior chip. But if I judge them strictly on taste, the deep fried chip wins every time.
