Part of this problem is caused by the type of sweet potato. There are moist-fleshed and dry-fleshed sweet potatoes.
If you are
growing sweet potatoes
in your home vegetable garden and you know you want to make oven baked chips or fries, plant a dry-fleshed variety like Jersey Yellow, Nancy Hall or Boniato (Cuban sweet potato).
Most markets do not label sweet potatoes by variety. Look for paler skin and flesh (more yellow than orange) as most of the dry-fleshed varieties have lighter skin and flesh.
Sometimes grocers will label these as yams.
