Banana Blueberry Bread Recipe

Easy recipe for banana blueberry bread. This blueberry banana bread recipe uses lots of fresh berries. Butter makes the loaf moist and yummy. Whole wheat flour can be substituted for a potion of the AP.

Banana Blueberry Bread Ingredients

  • 1 1/3 cups all-purpose or bread flour (1/3 cup of this can be whole wheat flour. I have made it this way and it comes out great. I don't know what will happen if you use more whole wheat flour.)
  • 3/4 teaspoon fine ground sea salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar plus 1 teaspoon
  • 7 tablespoons soft butter
  • 2 large eggs
  • 2 ripe bananas and a cup of fresh blueberries

Baking Instructions

Preheat your oven to 350 degrees F. Bake the bread in a 1-1.5 quart loaf pan in the bottom half of the oven.

  1. Cream the butter and sugar (reserving 1 teaspoon) together with a spoon. Add the bananas and mash them in with a potato masher. Now add the eggs. Beat until all the ingredients are well incorporated. The batter will be lumpy.
  2. Now add the remaining dry ingredients (except for the sugar) and stir the batter up well. You need to make sure that the salt, baking soda and baking powder are evenly distributed or the bread will have sour or salty spots in it. This is why some banana bread recipes have you mix the dry ingredients separately before adding them in.
  3. Now, fold the blueberries in gently.
  4. Scrape the batter into a buttered loaf pan. Sprinkle the remaining sugar over the top of the batter and bake it until it is done (40-50 minutes).
