Basic Banana Bread

These are my favorite easy-to-make banana bread recipes. They are all quickly hand mixed with a wooden spoon so you won't need an electric mixer.

Also, in the interest of saving time on clean up, I mix the batter in 1 large bowl. As long as you cream the butter and sugar together first, then add the bananas and eggs before moving on to the dry ingredients, your banana breads will bake up tasty.


How to Make Banana Bread Moist

The 2 most common complaints about banana breads is that they are

  1. dry or
  2. tasteless.

Two things make banana bread moist: fat and fruit. If you add enough of those 2 ingredients, your banana bread recipe will come out moist.

All the recipes on this page use butter as the fat. Butter is my fat of choice for banana bread recipes because it not only makes the banana bread moist but it adds a richness that no other fat can match.

I do not make low fat banana breads because when you omit or skimp on the fat, it makes the bread come out dry. Sometimes, in an attempt to overcome this, people will add applesauce or an extra banana to the recipe.

This works to a degree. The extra fruit will add moisture but it will also change the texture of the finished bread.

Butter banana bread has a unique texture that you will lose if you substitute a different fat for the butter.

That said, if the reason you are looking for a moist banana bread recipe is because you need to serve the bread sliced at a family function where it will be exposed to air, substitute Crisco for the butter in the recipes on this page.

My grandmothers baked with Crisco and it gives baked goods a moistness that is longer lasting than can be achieved with any other fat.

I stopped baking with Crisco for 1 reason only: I believe that butter is healthier.

I have tried every other fat I can get my hands on and have yet to find anything that rivals Crisco for making cakes and breads moist.


Making Banana Bread Flavorful

Bananas are not a very strongly flavored fruit so your other ingredients need to make a contribution.

Butter is the most flavorful fat you can use.

A lot of banana bread recipes call for vanilla extract. I don't use it because

  1. it is expensive. If you make banana bread often, that little bottle will empty quite quickly. The reason banana bread is made is to use up leftover fruit before it spoils. It's supposed to be cheap.
  2. I think it takes away from the banana flavor.

Other flavor enhancers are:

  • Nuts
  • Spices
  • Add ins like coconut, pineapple or chocolate chips.


Basic Banana Bread Recipe

This is an easy, simple banana bread recipe. No nuts or extra add-ins, just a good old fashioned banana bread. Think of it as a foundation you can build on.

If you want to turn it into a Recipe for Banana Nut Bread just add 1/2 a cup of your favorite chopped nuts to it after everything else is mixed together. That's the only change you need to make.


Simple Banana Bread Ingredients

Dry Ingredients:

  • 1 1/3 cups all-purpose or bread flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2/3 cup white sugar
  • 2 tablespoons light brown sugar, divided

Wet Ingredients:

  • 7 tablespoons soft butter
  • 2 large eggs
  • 2 or 3 ripe bananas (about a cup but who measures bananas--use what you have)

Quick Banana Bread Baking Instructions

Preheat your oven to 350 degrees F. Bake the bread in a 1-1.5 quart loaf pan in the bottom half of the oven.

  1. Cream the butter, white sugar and 1 tablespoon of the brown sugar together with a spoon. Add the bananas and mash them with a potato masher.

    Add the eggs. Beat until all the ingredients are well incorporated. The mixture does not need to be smooth.
  2. Add the remaining dry ingredients (except for the brown sugar), and stir the batter up well making sure the salt, baking soda, and baking powder are evenly distributed.
  3. Scrape the batter into a buttered loaf pan. Sprinkle the rest of the brown sugar over the top of the batter and bake it until it is done.

When is Banana Bread Done?

There are 2 tests for this:

  1. Press the top of the bread gently with your forefinger. If the banana bread is done, it will spring back up at you. If not, you will feel it squish down. Test 2 or 3 spots in the center of the bread. If it feels squishy anywhere, pop it back into the oven for a few more minutes.
  2. Insert a clean butter knife into the center of the loaf. Banana bread continues to cook for a few minutes after you take it out of the oven so wait a couple of minutes before inserting the knife. If the knife comes out nearly clean

like the one in this picture, the bread is done. If there is raw batter on the knife, the banana bread is still raw in the middle. Bake it for another 10 minutes and test it again with a clean knife.



Recipe for Banana Bread with Sweet Basil

My husband Tiny turned his nose up at this when I first mentioned it to him, but after taking 2 big slices to work, he later called home to threaten me with bodily harm if I didn't save the rest of the loaf for him.

It might sound a little strange but, for basil lovers, this is a flavor match made in heaven.

I used the large, aromatic leaves of a sweet basil plant I have growing on my porch.

Use the basic recipe above. Add 3 tablespoons of, rough chopped, fresh sweet basil leaves after everything else is stirred in. Top with brown sugar and bake until done.

I like this banana bread recipe so well that I'm planning to grow some cinnamon basil just to try it using that variety. Lemon basil would probably taste terrific as well.


Banana Pineapple Bread Recipe

To the basic banana bread recipe above, add 1/2 a cup of crushed pineapple (fresh or canned) when you add the mashed bananas. The addition of 1/4 cup of sweetened coconut flakes and 1/2 a cup of chopped macadamia nuts will turn this pineapple banana bread into a great Hawaiian Banana Bread.

Pina Colada Banana Bread Recipe

Add 1/2 a cup of crushed pineapple, 1/4 cup of sweetened coconut flakes and 1/2 a teaspoon of rum flavoring to the basic recipe.


Banana Cranberry Bread Recipe

Add 1/4 cup of dried cranberries and 1/3 cup of chopped walnuts to the basic recipe. Omit the brown sugar and sprinkle the top of the loaf with a tablespoon of white sugar instead.
