Tomatoes are the most popular home grown vegetable in the U.S.

There is good reason for this.

The variety of colors, shapes, sizes and, most importantly, flavors makes planting tomatoes in the home garden a must for thousands of gardeners.

From the small, mildly-flavored pear tomatoes to the huge, rich and juicy heirloom beefsteak tomatoes, there are enough tomato varieties to keep tomato lovers growing and tasting new types for the rest of their lives.

Tomato canning is the best way to enjoy the flavors of the best tasting tomatoes in the dead of winter. It is also one of the best methods of storing tomatoes and preserving the health benefits of tomatoes for up to a year.

Cooking does destroy some of the nutritional value of tomatoes. And more vitamins are lost as the storage time lengthens. Still, canned tomatoes will retain about a third of their vitamins.

What is not lost in canning or storage is minerals. An average tomato contains: Potassium 400mg, Phosphorus 65mg, Magnesium 23mg, Calcium 32mg, Selenium 0.8mg, and Iron 0.5mg.

Canning Green Tomatoes
Canning Fresh Tomatoes

Unripe green tomatoes are more acidic than ripe tomatoes. This makes them more suitable for canning.

You can slice the raw tomatoes 1/4 inch thick and cold pack them into canning jars to put them up for making fried tomatoes later.

Add 1 teaspoon of salt (canning or pickling salt is best) per quart and fill the jars to within half an inch from the top with spring water.

Screw the lids on and process the jars in a hot water bath for 8-10 minutes at altitudes below 1,000 feet.

Fresh canned green tomatoes work better in a fried green tomatoes recipe than frozen tomatoes but are not exactly the same as fresh.

Canning Cherry Tomatoes

Are you overrun with cherry tomatoes? Want to put them up but worried about the skin and seeds?

The good news is that you don't have to peel each one by hand.

You can use them in recipes for canning tomatoes that call for the tomatoes to be cooked first then strained. Most tomato juice recipes are prepared this way.

You can also make tomato chutney or preserves where you only have to halve or quarter the fruit.

Good Canners to Use

This is the best pressure canner on the market in my opinion. Made in America. Big (30 quarts). Heavy. This is the canner for people who will be canning tomatoes in large quantities.

This Granite Ware Canning Kit is a great value for the money. You get a 21 quart water bath canner and all the tools a beginner needs.

It will work with both gas and electric ranges but cannot be used on smooth top stoves.

The Ball Jar Collection Elite 21 quart Canner is perfect for people who have ceramic stove tops. The bottom is flat and it fits the large burner well.

If you are worried about canning on one of these stove tops, don't be. I have a Kenmore on which I boil large, heavy pots of water on at least every other day. I've been doing this for years and I've never had a problem.

Of course, this stainless steel canner can be used on other types of gas or electric stoves as well. Much longer lasting than graniteware.
