Chocolate Banana Bread Recipe

Easy chocolate banana bread recipe. 3 bananas and a combination of butter and oil make this chocolate and banana bread moist. Baking cocoa and milk chocolate M&M's make this banana bread chocolate.

I used 3 bananas (instead of my usual 2) to make up this recipe for chocolate banana bread in order to balance the banana and chocolate flavors. The extra fruit confers the added bonus of making the bread more moist.

The coconut just makes it a little more special.

Chocolate Banana Bread Batter

  • 1 1/3 cups all-purpose or bread flour

  • 3/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 2/3 cup white sugar plus 1 teaspoon

  • 4 teaspoons baking cocoa

  • 6 tablespoons softened butter

  • 1 tablespoon olive oil (or whatever cooking oil you like)

  • 2 large eggs

  • 3 ripe mashed bananas

  • 1/4 cup plus 1 heaping teaspoon of sweetened coconut flakes

  • 1/4 cup M&M's Milk chocolate Mini Baking Bits

    Instructions

    1. Preheat your oven to 350 degrees F.

    2. In a large mixing bowl, cream the butter, oil and sugar (set aside the 1 teaspoon of sugar for later) together until smooth.

    3. Add the bananas and eggs. Beat with a wooden spoon until everything is mixed together. The mixture will be lumpy.

    4. Add all the remaining dry ingredients starting with the flour. You can stir them together in a separate bowl if you like, but I never do. The important thing is to get the baking soda, baking powder and salt evenly distributed through the batter. Mix until no flour lumps remain.

    5. Fold in the M&M's and all the coconut except the 1 teaspoon you need for the topping. Scrape the batter into a greased 1 quart loaf pan.

    6. Mix the sugar and coconut flakes you've set aside together and sprinkle over the top of the chocolate banana bread batter. Bake in the bottom half of your oven until a knife inserted in the center of the loaf comes out nearly clean.

      You can see that this knife is not completely clean. This is because of the banana in the recipe. There is no raw batter on the knife so I know the bread is done.

    The bread will continue to cook for a few minutes after you take it out of the oven so wait a couple of minutes before inserting the knife.
