You don't need a mixer to make this easy chocolate chip banana bread. You can mix it all up in about 5 minutes with a wooden spoon. Just set the eggs and butter out about half an hour ahead of time to let them warm to room temp.
Don't worry. I forget to do this all the time. You can soften the butter in the microwave if you need to do it quick. And use the eggs cold.
Preheat your oven to 350 degrees F.
Ingredients for this Chocolate Chip Banana Bread Recipe:
1 1/3 cups all-purpose or bread flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/8 teaspoon ground cinnamon
2/3 cup white sugar plus 1 tablespoon
1 tablespoon light brown sugar
6 tablespoons butter
1/2 cup creamy peanut butter (I used Smart Balance because it doesn't contain any hydrogenated oils.)
2 large eggs
2 or 3 ripe bananas
1/4 cup semi-sweet chocolate chips (I used the store brand. If you are a chocolate connoisseur, use your favorite brand and type.)
Chocolate Chip Banana Bread Recipe Directions
Peel the bananas and place them into a large bowl. Two bananas will balance the peanut butter and chocolate flavors perfectly. Three will tip the flavor balance more toward the banana side.
The whole purpose of making banana bread is to use up leftover bananas, so use what you have on hand. This will be a great banana bread either way, I promise.
Mash the bananas with a potato masher. You don't need to puree them; leave them lumpy.
Add the softened butter, brown sugar, white sugar (set aside 1 tablespoon for the topping) and peanut butter. Beat this together with the spoon then add the eggs and continue to beat until creamy.
Add all the remaining dry ingredients except the tablespoon of white sugar that you've set aside. Mix well. You want to make sure the salt and baking soda are evenly distributed throughout the batter. Otherwise, the finished banana chocolate chip bread will have salty or bitter spots.
Lastly, mix in the chocolate chips evenly.
Scrape the batter into a greased 1-1.5 quart loaf pan. The batter will be very thick and you will have to scrape it into the loaf pan. It will not pour like a cake batter. A rubber spatula is the best tool for this job. Use your fingers to get the last of it into the pan. Spread the batter out so that it is level.
Sprinkle the reserved sugar evenly over the top of the batter.
Bake in the bottom half of the oven until a knife inserted in the center of the bread comes out with only melted chocolate on it.
This takes about an hour.
