Portuguese Kale Soup Recipe
Good Portuguese kale soup recipe. Recipe kale potato soup. Kale and potato soup recipe. Also called caldo verde which means green soup. The soup of the people.
1 lb. (or less depending on how much kale you have and like to taste in your soup) of clean, fresh cut up kale leaves2 cups of russet potatoes scrubbed and cut up into small pieces1 small yellow onion, diced1/2 lb. of sliced, cooked Portuguese pork sausage (This is optional. Use any kind of sausage you like or none at all.)2 tablespoons olive oil2 beef broth cubes, salt and pepper to taste
Put all the ingredients into a dutch oven and add enough water to cover them. Cover the pot and simmer the soup until the potatoes and greens are tender.
*You can make this with leftover cooked kale as well. Just add it at the end. Cabbage may also be substituted for the kale.
This kale recipe serves 6 and takes 90 minutes to prepare.
