Is it okay to cut some of the dead looking roots off?

Yes. In fact, you should remove dead or rotting roots in order to protect the health of the plant.

Use a sharp, sterile knife and sprinkle the fresh cuts with ground cinnamon. It's a natural fungicide that is safe for orchids.
