Sweet Potato Rolls
Sweet potato bread recipe packed with

features the flavors of oatmeal, apple juice, brown sugar and cinnamon. Yeast risen sweet potato rolls mix up easily in the bread machine.
This sweet potato bread dough mixes up quickly in any bread machine. Use the bread program to bake a whole loaf right in the bread machine or the dough program to make sweet potato cinnamon rolls.
This recipe for sweet potato bread makes a medium loaf or a dozen rolls.
Ingredients1 cup warm apple juice2 tablespoons brown sugar1 1/2 tablespoons coconut oil (olive oil may be substituted)1/2 cup mashed sweet potatoes, unseasoned1 teaspoon cinnamon1 teaspoon salt2 teaspoons active dry yeast1/2 cup uncooked plain oatmeal--the quick cooking kind3 cups bread flour
- Pour the apple juice into the bread pan and sprinkle the yeast into it. Add the brown sugar, oil and cinnamon. Next add the
mashed sweet potatoes
and the oatmeal.
- Add the flour and salt.
Add 1 teaspoon of Kal Dolomite powder to the pan at this time to increase the calcium and magnesium content of this sweet potato roll recipe without changing the flavor or texture of the bread.
I add this to every bread or cake that I make. It is less expensive and easier to swallow than calcium tablets.
To make a loaf of sweet potato bread:
Put the bread pan in the bread machine and program it to bake a light crust bread. I made the loaf in the picture using the insta setting.
Let the dough mix for a few minutes and then stop the machine and check to make sure all the flour has been incorporated. If it hasn't use a rubber spatula to scrape down the sides of the pan before putting it back into the bread machine.
Let the loaf cool in the pan for 8 minutes after removing it from the bread machine. Then place the loaf on a rack to finish cooling before you serve it.
To Make Sweet Potato Rolls:
Place the bread pan into the bread machine and program it for dough. Check the dough after a few minutes of mixing just as in the sweet potato loaf recipe above.
Preheat your oven to 350 degrees F.
After the dough has risen, remove it from the bread pan and lay it on a floured cutting board. Cut the dough into 2 inch squares. Roll each square into a ball and place the rolls on a buttered cookie sheet.
Bake for 20 minutes or until the sweet potato cinnamon rolls begin to brown.
