Sweet Potato Bread Recipe

This recipe can be doubled and baked in 2 loaf pans or mixed and baked in a bread machine.
Ingredients1 1/3 cups all purpose flour3/4 teaspoon lite salt (or regular salt if you don't mind the extra sodium)1/2 teaspoon baking soda1/4 teaspoon baking powder1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg5 tablespoons softened butter2/3 cup white sugar and 2 tablespoons light brown sugar2 large eggs beaten1 cup mashed sweet potatoes, unseasoned1/4 cup orange juice1/2 cup chopped pecans (optional) you only need these if you are making sweet potato pecan bread
- Preheat your oven to 350 degrees F. Grease a 6 cup loaf pan (8 1/2x4 1/2 inch).
- In a large bowl, cream the white sugar and 1 tablespoon of the brown sugar into the softened butter. Add the eggs and
mashed sweet potatoes.
Beat the mixture until all the ingredients are fully incorporated.
- To turn this into a sweet potato pecan bread recipe, add in the chopped pecans now.
- Wisk all the dry ingredients together in a small bowl before adding them into the wet mixture. Add the orange juice and beat just until everything is evenly mixed.
- Scrape the batter into the loaf pan. Sprinkle the top with the remaining tablespoon of brown sugar. Bake the bread for 50 minutes or until a butter knife inserted in the center comes out clean. Set the pan on a rack to cool.
