Sweet potato cake, glazed.

This sweet potato cinnamon bundt cake is baked in a 10 cup bundt pan. It is spiced with cinnamon, nutmeg and cloves and glazed with an orange butter bundt cake icing.

If you are worried about getting the cake out of the bundt cake pan without tearing it, don't be. I'm going to tell you how to get it to slip out perfectly.

Recipe for Sweet Potato Cake

Cake Ingredients

  • 3 large eggs, room temp
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla flavoring
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 cup coconut oil, room temp
  • 1 cup of warm mashed sweet potatoes, unseasoned
  • 2 cups all purpose or bread flour
  • 1 teaspoon baking soda,
  • 1 teaspoon salt
  • 1/4 cup orange juice
  • Bundt Cake Glaze Ingredients

  • 2 tablespoon softened buter
  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla flavoring
  • 1 1/2 tablespoons orange juice
  • Directions

    1. Preheat your oven to 350 degrees F.
    2. Place the eggs, brown and white sugar and spices into a large mixing bowl and beat until fluffy. Add the coconut oil and mashed sweet potatoes and beat until everything is well blended.
    3. Whisk the flour, salt and baking soda together in a separate bowl. Beat in the flour alternating with the orange juice until there are no lumps. Beat the batter for at least 2 minutes with an electric beater.
    4. Scrape the batter into a prepared 10 cup bundt pan and bake in the center of the oven for about 50 minutes or until the edges pull away from the sides of the bundt pan and the center springs back when you press it gently with your index finger.


    Coating a Bundt Cake Pan to Make it Non Stick

    Butter the pan generously with 2 tablespoons of softened butter on a piece of wax paper. Then dust it with flour. Shake the excess flour off.

    Now, closely examine the inside of the bundt pan.

    The flour will be absent from spots you have missed with the butter. Butter all the bare spots.

    Now, scrape the batter into the pan and bake the cake.

    Just before you take the sweet potato bundt cake out of the oven, wet a kitchen towel with hot water and lay it in the sink. Remove the bundt cake from the oven and immediately set the pan on the dish towel. Leave it there for about 30 seconds.

    Using pot holders or oven mitts, immediately invert the bundt cake onto a rack. It will slip right out of the bundt cake pan, no problem.

    I made this sweet potato cake in an old, scratched bundt cake pan and it came out in one piece.

    Let the cake cool completely before glazing it.



    Bundt Cake Glaze Recipe

    This recipe for sweet potato cake can be served plain with vanilla ice cream but I like this orange butter glaze on it.

    Mix the butter and powdered sugar together with a wooden spoon. Add the vanilla flavoring and orange juice and stir until the lumps disappear.

    Drizzle the orange bundt cake icing onto the cake.
