Fried Chips Recipe

Directions:

1. Heat 1/2 an inch of oil in a dutch oven until a drop of water dances on it.

2. Fry the potatoes a few at a time on medium heat so that they are not crowded. Poke them with a wooden spoon to keep them from sticking together.

3. Use a slotted spoon or spatula to fish the slices out as they begin to brown. The chips will curl when they are almost done. Lay them on doubled paper towels to drain.

4. Sprinkle them with salt and pepper or one of the sugars while they are still warm.
