Sweet Potato French Fries

  • Fresh sweet potatoes, washed, peeled and cut into half inch thick strips or wedges
  • Extra virgin olive oil
  • salt, pepper and chipotle powder (for spicy sweet potato fries)
  • Directions:

    1. Heat 2 inches of oil in a large dutch oven until a drop of water sizzles. Add the potatoes carefully so as not to splash the oil and do not crowd them.

    2. Fry the sweet potatoes until they begin to turn golden--they don't really brown--then remove them from the oil with a slotted spatula. Add more fries to the oil every time you remove some.

    3. Place the hot fries on a plate lined with paper towels to drain. Sprinkle the fries with salt and pepper while they are still hot.

    Spicy Sweet Potato Fries

    Sprinkle a tiny bit of chipotle powder on the hot, seasoned sweet potato fries to make them spicy. Chipotle will add a smoky flavor along with the heat. If you want the french fried sweet potatoes to be hot but not smoky, sprinkle them with a hot paprika powder instead of the chipotle.

    I do not use a dip for sweet potato fries but you could use ketchup, honey or ranch dressing if you like.

    To be honest, I don't make these often. I prefer the sweet potato oven fries because they are easier to make and less oily. The fried ones take a long time to cook and you have to stand over them the whole time.

    Once you put the oven roasted sweet potato fries in the oven, you can leave the kitchen until they are ready to come out.

    Neither recipe makes a crisp sweet potato fry unless it is made with a dry-fleshed sweet potato.

    Crispy Sweet Potato Fries

    Most of the sweet potatoes produced commercially in the U.S. are moist-fleshed varieties (they usually have bright orange flesh). Moist-fleshed sweet potatoes are delicious but they contain too much moisture to make crisp sweet potato fries.

    To make crispy sweet potato fries you need to start with a dry-fleshed sweet potato.

    The surest way to obtain these is to grow your own sweet potatoes. The other way is to find them at a farmers market, flea market or fruit stand.

    They probably won't be labeled as dry-fleshed sweet potatoes. This is a designation you will only see on a gardening website or in a seed catalog.

    Dry-fleshed sweet potatoes will sometimes appear in local markets labeled as yams. They usually have pale yellow or salmon-colored flesh.

    The supermarkets near me often carry boniato (Cuban sweet potato). Boniato has a purplish skin and a very dry white flesh that will make sweet, crisp sweet potato french fries.
